The next guest chef residency is Kemble & Rodgers, offering a seven-course menu from 15 January to 23 February. They have experience at various Michelin starred restaurants including Hedone and Foliage at the Mandarin Oriental, and both Tom Rodgers and Thomas Kemble have also undertaken various international chef placements such as working at Richard Branson's chalet in Verbier and aboard private yachts in both the US and Caribbean.
They consider their style to be progressive British with a Japanese aesthetic. During their residency at House of Wolf, they will be using whole beasts, making use of each cut in a variety of innovative ways. Diners can expect dishes such as crab colonatta di lardo and granny smith apple sourdough sandwich in addition to Sika deer loin, salt baked beetroot, smoked chestnuts, pickled turnips, cime di rapa and parsnip mousseline.
